AC3, the new restaurant inside the yet to open Hotel Paseo, is set to open for dinner service on Sunday, February 25.
The eatery is taking reservations on its website for dinner (with plans to open for breakfast and lunch soon as well). Menu options include starters like Lobster Mac ‘n Cheese ($12), fried chicken oysters ($14), and a meat and cheese board ($18). Main course menu items include a pork schnitzel ($23), sesame crusted ahi tuna ($29), and the AC3 Burger ($16).
The bar menu shows a selection of specialty cocktails for $13, plenty of wines, and six draft beer options that include La Quinta Brewing Company’s Even Par, Coachella Valley Brewing Company’s Orange Joe Hazy IPA, ,and, for some reason, Michelob Ultra.

AC3 Restaurant + Bar is a collaboration between two well known Palm Springs restaurants: Trio Restaurant and Copley’s On Palm Canyon.
