If you like fish tacos, and you have a little time to spare on Thursday, you can hop in line at the new Rubio’s to score a gift card.
The franchise is giving the first 50 people who visit the newest location in Palm Desert (Highway 111 and San Pablo) $50 gift cards and some merch, according to a press release.
By the way, this Rubio’s is a Rubio’s Coastal Grill. The company has updated 70 of its restaurants to reflect the brand’s evolution beyond its signature Original Fish Taco to a more coastal menu and changed the look of the place.
They also feature some new menu items like Regal Springs Tilapia Tacos and Burritos, sustainable Grilled Gourmet Shrimp Tacos, a California Bowl made with wild Alaska Coho Salmon, and a Chipotle Orange Salad with all natural chicken raised without antibiotics.

Rubio’s Coastal Grill opens at 10am Thursday (and everyday after) – though you might want to get there a bit early as new places in Palm Desert usually see a pretty decent sized line for a grand opening.
