The Instant Pot is a rad cooking thing

I have found, during my limited time on earth, that most cooking appliances and gadgets are really overrated. The ones I have taken a chance on are typically used once or twice, discarded into a drawer, and eventually sold for 10% of what I paid for it at a yard sale.  Luckily, the Instant Pot is as good as advertised.

I had a few friends rave about it over the past couple of months so, after a few beers on a recent night, I did a little buzzed Amazon shopping and 2 days later the Instant Pot was at my door!

In just two weeks I have used the shit out of this baby. I have slow cooked soups and stews, made hard boiled eggs, and pressure cooked some tasty ribs, delicious fall-off-the-bone chicken, and carnitas so good I made it again 3 days later.  I have yet to make yogurt because it just seems weird for some reason.  I will do it eventually.  I think. 

Cooking with it is easy and, as I am lazy after eating a good meal, cleanup is even easier – which might just be the best part of this thing. Well that and the fact I can clear out space by getting rid of my old slow cooker, pressure cooker, egg cooker, and rice cooker – both clearing drawer space and making any future moves have a few less boxes.
