Each year, grocery stores around Palm Springs and the Coachella Valley fire up massive roasters to cook fresh Hatch chiles straight from New Mexico. The smell alone is enough to stop traffic. Hatch chiles are harvested only once a year, which means if you miss them, you’re waiting another twelve months.


When Does Hatch Chile Roasting Happen?

In the Coachella Valley, Hatch chile roasting events typically take place from mid-August through early September. Specific dates and times vary each year depending on harvest timing and store schedules.

Good to know: These events are almost always limited-time and weather-dependent. If you see one happening, don’t assume it will be back the following weekend.
